I've done this on a branch because it's a little risky, but I think I'm happy with it.

A problem: we don't commit any metadata to github that tells the CLI which project is checked out to workflows. There might be 4 projects saved to the repo, but it's unclear which one is actually representative of the current branch.

The solution: when pulling from github:
a) Check to see whether there's a checkout.yaml file
b) If there isn't, ask the user which project matches
c) Initialise a checkout file

By default, we try and match the project alias to the current branch, or default to main.

Users can choose to commit the checkout file but it'll overwrite on merge and cause problems... so we don't want that.

Project metadata now lives in .openfn/checkout.yaml, openfn.yaml holds
workspace config (plus collections) as flat, sorted keys. Integration
tests pin OPENFN_BRANCH=false so they don't pick up the kit repo's branch.
