fix(security): vitest 5.0.5, pinned pnpm action, read-only CI token - #20

- vitest ^5.0.3 (lock 5.0.5): @vitest/mocker advisories (manual mock code injection, Windows backslash traversal). Dev dependency only; the published package is built with tsc. - pnpm/action-setup pinned to the commit v4 points at today (v4.3.0) in all three workflows (CodeQL actions/unpinned-tag). - CI runs with permissions: contents: read (actions/missing-workflow-permissions). Fixes the open Dependabot and CodeQL alerts (digitizer-tasks#194).
